Yesterday, I had free time in the afternoon, a hankering for some kind of Mexican food, and no actual recipe to follow. So, I think what happened was some kind of unholy combination between burritos, enchiladas, and fajitas.
What I ended up baking was chicken, chipotle-cheddar cheese, corn, rice and green tomatillo sauce wrapped in flour tortillas with sautéed green peppers and red onions.
"Chicken enchiladas" might be the best description, but it's not entirely accurate. But I do know that Joe ate three of them at a disturbingly fast speed. And I just ate one for breakfast. So, yes, this dish is having an identity crisis, but it would appear that there will be none left by this evening.
